Leftover Mashed Potatoes Quick & Easy Recipe

In Eastern Europe we hate to waste food. There is always a way to recycle everything! And it is even better when you can prepare a delicious, quick, easy and nutritious food, right?
One of my favorite ways to recycle leftover potatoes is to prepare knedle. The perfect meal for many people in Central and Eastern Europe in September, when plums ripen. Even though it is a super popular dish in the Slavic countries, it has its origin in the German-speaking countries! The word ‘knedle’ itself doesn’t sound very Slavic, does it? It comes from the word ‘Knödl’ which in German means ‘dumpling’.
There are numerous vaiations of this potatoe-based dish. You can stuff it with meat, mushrooms, jam, chocolate, apples, soft cheese… Whatever comes to your mind! My one and only version of knedle is the most traditional one – with whole plums. You can stuff it with whatever you find in your fridge and whatever you feel like!
In Poland we usually eat it as the main course, what is unacceptable for example in the Balkan region. Here they serve it as a dessert after a heavy meal
What you’ll need
1 kilo of peeled, previously salted, cooked and cooled potatoes
Pinch of salt
300 grams of all purpose flour
25-30 plums, seedless
Tsp of grounded cinnamon
Tbsp of butter (or coconut oil to fry the plums)
Dry, grounded bread (homemade is best, but you can buy wheat bread crumbs)
2 eggs
Tips before cooking:
The less flour you add, the more delicate they will be. If you don’t add enough, they may fall apart. Add more flour if you like them to be thick and chewy.
Sprinkle your hands with flour, so the dough doesn’t stick.
Some people just cook knedle and then serve them with sweet cream, sugar, cinnamon, or butter and bread crumbs dip. I love them soaked in butter and bread crumbs and them sprinkled with sugar!
This recipe will give you around 25-30 knedle, depending on the size.
Stone the plums, mix with butter and fry for 5-10 min. Add cinnamon
Mash potatoes, salt them if you like, add eggs and flour and knead the dough until soft
Take a small portion (mandarine size) of the dough, form it like an American pancake and place one plum in the middle
Form a beautiful ball
Cook knedle in boiling for roughly 5 minutes. Be careful not to overcook them, because the dough will fall apart!
Serve! Either cooked or fried. Now it’s all up to you!
