dear rdywenur and nancy, you girls are really cool! im a city kid who just says it like it is. if im up in your area i will be sure to stop in where you both work and harass you girls for a couple of hours chicago style! also rdywenur if you should wake up and find 100 plastic pink flamingos on you front yard that means mikey was there! im joking about the farm! i develope recipes for startup operations around the world and cook alot up in napa valley. i just like the calmness of the country opposed to the clamor of the kitchen. flying around gets old. i recently made some changes in my life that loosened up some tight ends so this is the year to get your polish butt in gear and geter done!!! PS DO NOT DRINK GALLO CHARDONNAY WINE FOR A WHILE! WHEN IM IN NAPA A GROUP OF US CHEFS TAKES A 3 MILE AFTERNOON WALK AROUND THE VINEYARDS AND GALLO WINERY FIELDS IS OUR PEE POINT! piwo i got all the stuff i need to send it to you! thanks for the offer of getting it at a store. the books been out for two years now and has sold out like 10 times! the problem is in being a one book author and dealing with big book resellers. whatever way you want to do it is fine. the book weighs about 3 pounds to let you know!

Must be from all the lard used to fry the food! ;D If it was my grandma's recipe's, you'd need to resupply the lard closet!

Hey Mikey B,
I made your "Savory Polish Topping" tonight to use on pierogi. I, my wife and daughter loved it! But I just wanted to make sure it turned out the way it was supposed to. This is not a liquid topping, right? Mine came out with the consistency such that you would take a spoon and sprinkle it on top. Just wanted to check. I've no digital camera, so can't take a picture: but maybe my daughter will have her camera with her tomorrow. I will be trying the Tavern Pan Sinkers tomorrow and will give it another go!!!

Piwo...where did you find the recipe for the Savory Polish Topping for your pierogi. I looked all over the board but haven't found it. Was it sent to you. If so can you share or is it in the cookbook. I'll have to wait for my copy then.

Wondered if you could answer the following: In Japanese cooking - they use something called Panko....they use like a cup of this with sesame seeds along with the rest of the recipe................what is Panko - a flour???

Lily, Panko are Japanese breadcrumbs. They are coarser than regular breadcrumbs and are great as a coating for chicken or fish before baking. I found some in the Asian food part of the supermarket. I only recently heard of them and discovered them.

Panko is great stuff. I use it on cutlets. Make the cutlet thin use the panko and fry. Great with Tonkatsu Sause on them.

Suzzane - Gardenmamma - Jim............thank you so kindly for clearing up Panko - will get some as I have a fried fish recipe -
I'm also trying to get recipes using the Chinese bamboo steamer - the booklet I got with the steamer for Christmas doesn't have too many recipes. We really like the vegetables that come out of the bamboo steamer - fish and seafood as well...............
