I must say, all renditions are very good, with exceptions such as with the Emm Cohen Trio feat, for their style is in a Afro Jazz beat. This song is a very serious love song that is the icon of France and needs be kept as what it is meant to be.
Of above is of course my personal opinion and if others differ, then this is of our individual taste and needs be respected as such.

She has a quality to her voice that is very musical.

My self do hold a great respect for your preference, for it makes good sense, for as Miss Edith Piaf seems to dominate the song as should be. For my self, her voice grates my nerves for her high pitches in her high notes.
Miss Piaf holds a great respect from many of her fans such as your self and with this, perhaps an icon of French music culture.
