Good choice John. That must be delicious, remembering the cook you are! I remember that my babcia from Poznań made the best roasted duck there is! She was a top cook! I mean it!

Pieter's recipe looks similar to Polish ones. I remember Polish duck with apples.... so it is just right for this season.

Well, I prepared the duck according to the Polish Grandmas recipe. It turned out delicious. My son, his FF and I enjoyed it very much. Will definitely add this item more often to our menus. My next culinary adventure is 'roast goose'. My mother prepared it when I was very young and I do not remember what it was like. Also, we have a preponderance of wild turkeys here and I must try one of these also. Tomorrow we will have braised chicken. I have a 10 lb capon and we will have mashed potato with gravy and butter cup squash. For dessert we will have the following: Easy Fresh Pear Cobbler
Prep Time: 15 minutes Cook Time: 60 minutes Ingredients 2 to 2 1/2 cups sliced fresh pears 2 cups sugar, divided 1 stick (4 ounces) butter 3/4 cup all-purpose flour 2 teaspoons baking powder 1 teaspoon cinnamon 1/4 teaspoon salt 3/4 cup milk 1 egg Preparation Mix pears with 1 cup sugar and let stand. Put butter in 2-quart casserole and place in 325° oven until melted. Combine all dry ingredients, including the remaining 1 cup of sugar. Mix well. Whisk together the milk and egg; slowly combine with dry ingredients to make a batter. Pour over melted butter. Do not stir. Spoon pears over the batter. Do not stir. Bake at 325° for 50 to 60 minutes, or until nicely browned and pears are tender. Serve hot or cold with ice cream or whipped cream. Have a nice evening my friends.

John, glad your goose was good.... just do not kill all the animals in your farm By the way, thanks for peach cobbler recipe, we have so many peaches, I had to do lots of pies and cobblers recently. Yours sound even better than what I did last Sunday, I need to try
