Jaga your recipe sounds good. Do you not roll your nalesniki completely. When my mom made them they were folded at one end over and then rolled..like blintzes. I should try to make some since I am home now with plenty of time. (Ha!!!)

good idea, maybe when you roll it than the filling does not fall off. No, we always did this envelope shape at home.

Okay Jaga.... I stopped at the new (well they moved into new building with more space) Polish Deli and bought some Farmers cheese ...straight from Kracow so it's got to be good...at least that is what the owner is telling me.....now let's hope for some good results. One question...my mom never used baking powder and I went to my Polish Heritage cookbook and none of the recipes in there used it either. Is your nalesnika a pancake or a crepe type. Now you've got me curious.
If they comeout good I will have pictures, if they are bad I will have developed amnesia. ;D

Chris,
farmer cheese should be good. Yes, I did use some baking powder, the dough was very good and really easy to prepare. Make sure to use butter or margarine and not to burn it (It is very easy to burn a pancake, at least for me l))

Pawian, it is hard to say which way of rolling is really Polish but I love your pictures and possibly I will add it to the recipe article also.
