No recipe for caribou stew here, I am afraid. When I have it I just cook it as a substitute for a lean beef. Now with the Slovak influence and hundreds of years of Hungarians hanging around our neighborhood, I really appreciate a good goulash, and caribou would be ideal for that! In fact, blending ethnicities, the best klobasa (Polish kielbase?) I have had in years was some good reindeer sausage properly spiced by the butcher. Reindeer is simply the domesticated caribou.
