What is Ruskie Pierogi and why do they call it that?

These are the dumplings with potatoes and cheese. Why ruskie? I am not sure, probably originally they came to Poland from the East here is one of the recipes: www.recipecottage.com/polish/pierogis08.htmlPierogies are very tasty but also time consuming

George, here is the history of Pierogi ruskie: www.wuw.pl/index.php?tresc=feliet&idfel=53the originate on the East corners of Poland - not really in Russia but in Western Ukraine therefore they were called "rusie" not "rosyjskie" in Poland. But in Lvov - which belongs to the Easter Borderland (Kresy) these pierogi were called "polskie" among Polish repatriants in WRoclaw after WW II the same pierogi were called... "Lwowskie" - from Lvov!

I remember helping my mom make these. We would set up an assembly line. . . the potatoes would be cooked, and mashed with the cheese. . .we would make the "noodle" dough by hand, cut out all those rounds, fill them, and make sure they were sealed good. We made them big, too. . .more like a Cornish Pastie. My mom would boil them up and serve them with applesauce and an onion/butter sauce. My dad would take them to work with him as lunch. We would make a ton. . .spend all day making them, and freeze some for later. If I had some help, I would do it now, at my home! It was impossible to do alone.

Oddly enough, Costco sells them! A big box of potato and cheese pierogi (though if I recall, they spell them pirogi). And it may seem like blasphemy, but they're not too bad!

which are which - we found both in Poland - both were very good - seemed that the small ones were always in a kind of creamy mushroom gravy kind of presentation...........bigger ones were boiled or friend and you added your own whatever (mine is sour cream - real sour cream). lily

BJ's - another warehouse club like Costco - sells them also. In our case, whatever brand they are - I forget, they are not too good However, this combination of mashed potato and cheese seems to be pretty common for the "church ladies" to make for food sales around here. I will buy them at the sales; I like them, husband doesn't. He gets sauerkraut! We never made the potato & cheese combination at home when I was growing up, nor fruit-filled pierogi. However, I really do like the fruit-filled ones ;D I haven't made any on a long time. The mother, recently deceased, of a close friend used to make lots of pierogi. I suspect as something useful to do with her time. She lived with another daughter who was very organized and efficient. My friend used to bring me half of her "take" whenever she visited her mother. WE both always had plenty in our freezers. ;D Maybe, I'll have to coax my daughters into helping me some afternoon when I visit them!
