To my knowledge Saint Nicholas, St Mikołaj,Sinterklaas in Dutch and Flemish was an Byzantian Bishop and in present day terms he would be Turkish. Where the Dutch & Flemish take the idea from that he came by boat from Spain I have no idea of.
Saint Nicholas of Myra (traditionally 15 March 270 – 6 December 343), also known as Nicholas of Bari, was an early Christian bishop of Greek descent from the maritime city of Myra in Asia Minor (Greek: Μύρα; modern-day Demre, Turkey) during the time of the Roman Empire. Because of the many miracles attributed to his intercession, he is also known as Nicholas the Wonderworker. Saint Nicholas is the patron saint of sailors, merchants, archers, repentant thieves, prostitutes, children, brewers, pawnbrokers, unmarried people, and students in various cities and countries around Europe. His reputation evolved among the pious, as was common for early Christian saints, and his legendary habit of secret gift-giving gave rise to the traditional model of Santa Claus ("Saint Nick") through Sinterklaas.

In the Netherlands this year
My sister celebrated it with her 4 year old daughter and 22 year old son in the farmers village of Biggekerke, where she rents a house. I stayed at home in Vlissingen to take care of my dementing mother with Afasy. My father is in a nursing home in Middelburg where we visit him every day. In the sense of our family members or friends. Due to my job in Arnhem I can’t be every day in Zeeland. My sister is planning and working on staying in the Netherlands. Her daughter liked the Sinterklaas (St Mikołaj) presents 🎁 on Saint Nicholas birthday, 5 December 2021.

The feast of Sinterklaas celebrates the name day of Saint Nicholas on 6 December. Sinterklaas is one of the sources of the popular Christmas icon of Santa Claus.
Sinterklaas is based on the historical figure of Saint Nicholas (270–343), a Greek bishop of Myra in present-day Turkey. He is depicted as an elderly, stately and serious man with white hair and a long, full beard. He wears a long red cape or chasuble over a traditional white bishop's alb and a sometimes-red stole, dons a red mitre and ruby ring, and holds a gold-coloured crosier, a long ceremonial shepherd's staff with a fancy curled top.
He traditionally rides a white horse. In the Netherlands, the last horse was called Amerigo, but he was "pensioned" (i.e., died) in 2019 and replaced with a new horse called Oh zo snel ("oh so fast"), after a passage in a well-known Sinterklaas song. In Belgium, the horse is named Slecht weer vandaag, meaning "bad weather today" or Mooi weer vandaag ("nice weather today").
Sinterklaas carries a big, red book which records whether each child has been good or naughty in the past year.
