Hard to say when apples arrived in Polish kitchens...but they are just as popular there as in the rest of the world. Here is a new adaptation of Apple Brown Betty. AKA Apple Crisp which has been a favorite in our home for (it seems like) forever! This is very easy to make...husband slices the apples in about 16ths; doesn't bother to peel them. He also sorts and washes the cranberries when we use fresh ones. I do the rest of the assembly. Enjoy!
Low Fat Apple Cranberry Bake
3 cups (about 1 pound) Granny Smith or your choice firm apples,
Peeled if desired and sliced
2 cups fresh cranberries, washed or
1 cup dried cranberries
⅓ cup white granulated sugar
1 tsp. Vanilla or maple extract
Nonstick cooking spray
⅓ cup whole wheat or white wheat flour
1 cup old-fashioned or one-minute oats
⅓ cup Splenda® brown sugar blend, packed or
Equal amount of "regular" brown sugar
1 tsp. ground cinnamon or
Apple pie spice
¼ - ½ tsp. liquid butter flavoring (optional)
¼ cup Canola oil
Preheat oven to 350° F.
Makes 9 large or 12 small servings
In a large bowl, combine apples, cranberries, sugar, and vanilla (maple) flavoring; mix well. Spoon into an 8" x 8" square baking pan coated with cooking spray.
In a medium bowl, combine flour, oats, brown sugar, cinnamon (apple pie spice), and oil; stir to mix with a fork or pastry blender until moistened. Sprinkle evenly over apple mixture and bake for 40 minutes or until bubbly.
Optional: For a more liquid and bubbly apple mixture, sprinkle several tablespoons of water or apple cider over apple mixture immediately before baking.
