Hi folks, particularly Piwo - may I share my experiences in making Barszcz and the use of stock. I started using meat and went to all the trouble of scooping off the fat residue - yuk. It was also expensive as the beef did not always enhance the soup and you are left with meat/bones that have little nourishment if you want to use them. Also all of these add a lot of expenses to your Barszcz. I tried stock cubes - but all they are fir for is making gravy to put on your meat etc on the plate and give the Barszcz a not very good taste. I then found Knorr prepared stock - there are both chicken and beef; I prefer to use the chicken as the taste is the least strong and doesn't compete with the beetroot and onion. I buy mine in the local big supermarket where I found it hiding among soups and sauces.Photo below: It comes in a sealed plastic 'envelope' containing 450 ml of stock. The ingredients are Water; reduced chicken or beef broth, salt, carrot, leek, celeriac, spices and herbs. It is described as a clear stock made from completely natural ingredients. Delicately seasoned with vegetables and herbs, the stock gives your home-cooked meals a delicious, well-rounded, rich flavour. You just pour it into your Barszcz mixture almost near the end of the cooking period, mix it in and continue cooking for a while. I always use this now, wouldn't use any other and really recommend it from my experience. Can't remember its cost, but it is far from expensive. Leslie

This is a good alternative, and certainly cheaper. Now my problem is, will I be able to find it here? Knorr is not a brand readily found here except at the local Polish Sklep. I've posted pictures of their dried soups and sauces, but have never seen this product. I shall inquire from the proprietor if he has, or can get it. The cost of my stock yesterday was the cost of the beef bones, 10USD for @ eight pounds of meaty bones. The rest of the ingredients are regular staples always on hand. The time of course was several hours and this is of course a big inconvenience if one's spare time is limited, as is mine in my current state. That alone is the reason I am not enjoying Barszcz this weekend, and merely in possession of @ 3quarts of stock. I shall print a picture of the product and take it to the Sklep with me the next time I go: that way, the owner will know exactly what it is I want. That is interesting, Piwo, that Knorr is not readily found in your area. Here it is in all the supermarkets. I just googled, and found www.unilever.co.uk/ourbrands/foods/Knorr.aspaccording to that page, the "simply stock" item is new this year. I wonder if it is available only in the UK (and who knew the parent company also owned Ben&Jerry !!!!) Maybe Leslie can purchase some and send it to you ... well, maybe not, if it is a food item.

Nancy they were busy making soup and then they had to have dessert and Ben & Jerry's ice cream was born. Yup, honest, for real. ;D
Piwo we have Knorr here too. Not sure about the Simply stock but the section is all alone.

Well, We have Knorr in the Polish Sklep, but not in our grocery stores, that I can find anyway. I'll look much closer next time I shop (but am working out of town all weekend, Tampa FL). I didn't see the stock at the sklep, but of course will ask the owner. I went to Chicago last week, but didn't even go into the sklep like I wanted to. Couldn't have brought anything back even if I wanted to with the new regulations as I didn't check any luggage for a "same day" trip.

Back to the Knorr prepared soup "bases" I found all three (chicken, beef and vegetable) like the one pictured by Leslie in the Kroger's in Roanoke, VA So...if this Kroger's in south Roanoke stocks it, this should be easy for any of us to find! Also...please see my note in the "Realities of Soup Stock" ... GM
