I do have a recipe to frutatta and there is a baking mix there listed. What is it really? Can pancake mix be considered baking mix, or simple flour?

Bisquick is an all purpose baking mix. It is primarily enriched flour, with a whole litany of other minor ingredients. If it calls for baking mix, I'd use Bisquick. Pancake mix is also quite similar, but browns differently in my experience.
Some use bisquick alone for pancakes, though my own recipe is to mix 1 cup bisquick, 1/2 cup pancake mix, and 1/4 cup jiffy cornbread mix, using and egg and milk(even if the pancake mix calls for water).

alright jaga its time you come clean about what your doing! first questions about potato starch, now this!!! if your going to open up a polish bakery in idaho i want in!! piwo as usual excellent baking advice.. tommorrow night after lacrosse practice im going to make my boys those hearty pancakes rolled around grilled polish sausage and sprinkled with cinnamon sugar!!

Piwo, Mikey, thanks for your wonderful advice and yes, I would love you to live closer so that I could use your products here in Idaho - like the pancakes I would never open a real business here, I do not have really any experience with business so I am sure I would bankrupt the next day

The other two things that will make a great pancake is griddle temp, and thickness of batter. Runny batter makes thin, tough pancakes. Too thick and you won't get them cooked all the way through without messing them up badly. So, it's a hot griddle ( water drops dances very briskly and evaporate almost instantly, batter on the thicker side. When done perfectly, you use a big spoon or pour the batter and must use the spoon to spread it thinner. When it looks like the moon with all the bubbles, it's time to flip. Once flipped, it should quickly "rise". I wait about 5-10 more seconds and get it off the griddle!
PS: can you tell I take my pancake's seriously..LOL All my daughters friends would want to spend the night while growing up cause I made the best pancakes! Lotta pressure there!!!
