Do you see potato starch anywhere anymore? I do not. It looks like it disappeared completely from the shelves during the last couple of years. Is corn starch any different than potato starch and can be used instead?
In Poland we use almost exclusively potato starch

Yaga, My mom made zapraska from melted butter and flour..Corn starch and arrow troot is good too

Jaga, In cooking, corn starch is very different from potato starch...I don't know enough food chemistry to tell you why. AS to buying it...there is a brand used around Passover which is usually in the Kosher section of general food stores, or if you can find a Kosher shop it will be there. (If I remember the name of the brand I use, I'll be back to tell you.) The other source, which can be accessed from the Internet, is King Arthur Flour www.kingarthurflour.com/GM

thanks, I try to look at kosher section (Manishevicz) but unfortunately I cannot see it anymore.

Jaga, I looked into the jar in which I keep my Kosher potato flour today. Unfortunately, all I placed in the jar was the part of the label that said "Potato Starch" But, I also had two small packages of potato flour from King Arthur...so they do have it. GM

thanks for your hints. If I would be desperate I would order it online. But this is strange, I remember first when I came to America the potato starch was still in the groceries, now it disappeared from everywhere.
At least I was able to buy horseradish for my hosreradish soup!

Maybe I missed something...in what are you going to use the potato flour?
I'll check in the grocery tomorrow to see if there is any. Do you want me to send some to you?
Good to hear that "Mike The Chef" is all right (more or less) and that he could tell us about the cooking differences in the different types of starch.
