Well, I'll modify it slightly, because I want that chunk of Kielbasa inside, not some ground up meat!.What I couldn't figure out was how to make the dumplings. I also had them without meat in them, and there was a delicious sauce to pour over the top. They too, were excellent.

Does anyone have a simple recipe for a sauce to pour over tho top of the pyzy? I had a sauce one time that was bardzo smaczny and would like to try it as well.
Tonight's the night I will attempt to make the pyzy z mięsa. My surgically corrected knees feel strong enough to stand for awhile, so we'll give em a shot. So with any luck, tonights fare will include Pyzy z mięsa, szłabowy kotlet and Bigos. A shot of Belvedere wódka before dinner to "wet the appetite, and a shot of Wiśniowka as a cordial after. If the Pyzy doesn't turn out, maybe a few more Wiśniowkas! ;D

Piwo,
Let us know how the trial of pyzy goes ... if all else fails, pour the wodka over the pyzy and they will be delicious!

Piwo, Let us know how the trial of pyzy goes ... if all else fails, pour the wodka over the pyzy and they will be delicious! Nancy, If only you had posted sooner, this would have been a capital idea! My attempt at the pyzy was a dismal failure. I could not get the "dough"(for lack of better term) to a decent consistency, and adding more flour just made it taste like, well, raw flower! It didn't stand up well in the boiling, and it's finished texture was poor. This may be one of these things I will need to see done first hand, and may not reflect on the recipe itslef... Back to the drawing board...

Piwo, A few suggestions from this corner of the Forum, even though I haven't had a chance to try your pyzy from scratch... - In Polish Heritage Cookery (Hardcover)
by Robert & Maria Strybel there are several variations for pyzy along with recipes for sauces. BTW, there is a 2005 edition of this cookbook...I am still waiting for mine to be delivered.
- All potatoes are not created equal...some will contain more starch than others...I have had several nasty experiences of making whipped potatoes that had the consistency of wallpaper paste...so instead of adding wheat flour try adding potato flour (sometimes sold as potato starch) a little at a time.
- RDY says she has used the "Knorr" potato dumpling mix; I bought a "Panni" mix (German) at our local grocery store for $4.29 (!). The store has a pretty decent Polish section. This mix will make about 11 dumplings roughly 1.5" in diameter.
I haven't been over to the Polish deli to see what if anything they have other than "Panni" mixes.
I have two 5 lb. bags of "Russet" potatoes waiting to be cooked up into something...maybe I'll try the dumplings ( pyzy on Sunday to go with husband's German tradition of pork and kraut for New Year's.

I really didn't consider that angle.... Maybe it's more like "Animal House".. all potato's are created equal, some are just more equal then others"! I'll wait till I get MikeyB's cookbook and see if he has a version of same, and if not, I'll try a different type of spud, or add potato flour instead of regular flour. I don't get to cook that often, but I will in a weekend or two....
