These recipes do look good - and simple! I especially want to try the asparagus one.

I especially want to try the asparagus one. so I went to the grocery store for my asparagus and other items ...no asparagus!! apparently wherever the supplier is located had very heavy rains and the crop was no good - when it arrived at the store(s), the shipments were rejected ... no strawberries either. I think we will have salmon for Easter dinner.

Yup, we had salmon. "Tuscan Salmon" no less (sundried tomatoes, cracked red pepper, garlic, etc. as a toppping) No Chef Mikey asparagus. No Boozy Ham. No kielbasa. No pierogi, no Easter bread, no lamb cake with coconut frosting ... no Polish food at all. No chocolate. Why did I even bother to get up? Easter was definitely better when I was a child.
