Nalesniki (Crepe Suzettes) 1 1/2 cups of milk 1 cup flour 3 eggs 3/4 tsp. salt 4 tbsp. sugar In advance, mix together all above ingredients until smooth. Grease an 8 inch skillet lightly with one teaspoon vegetable shortening. Heat then pour in some batter to coat the bottom of the skillet. Tilt skillet to cover evenly. Cook one minute. Loosen pancake with spatula; flip onto heated griddle and cook there, turning several times until a delicate brown. Prepare rest of pancakes likewise, cool and then keep covered so they will not dry out. Filling
3 lbs. Farmers Cheese 3 eggs 2 tbsp. sugar 1 cup golden raisins (optional) Cinnamon to taste Mix together above ingredients. Spoon a tablespoon of filling on each pancake. Carefully fold in edges and roll up. Place in greased Pyrex dish or similar and heat in oven befor serving. If desired, garnish with strawberries or maple syrup.

John,
My Mom use to make them for us when we were kids - so good! But so tedious to stand and fry all of those pancakes.
I had my eye on an electric crepe maker (!) - no booing or hissing, please - thinking it would make the job of frying easier and perhaps more of the family could enjoy them if I was so inspired!
But thank you for sharing the recipe with us.
Our group in Poland had tiny little ones for lunch (desert?) in August, 2006 at a convent / girls school. Some were filled with pieces of spiced apples.

Thanks for the recipe also JJ. My mom use to make it for us also when we were younger. She orderd the farmers cheese from our dairy who were Polish also. They use to deliver milk right to us. Buttermilk, maslanka and everything else. Tolpas Dairy. I don't think they are around but I still remember the driver.
I just did a Google and they are still in the business but as wholesalers. They are in Utica, NY
