To all, I need your help, I need a great receipe, for a Polish Mushroom Soup, with fresh mushrooms, not dried ones. Can you help, and soon, please. Michael Dabrowski I have a recipe for creamed mushrooms which comes from an heirloom Polish cook book, printed in 1960. I would imagine that one could make soup out of it. ------------------------------------------------------------------ Creamed Mushrooms 1 lb. mushrooms 1 large chopped onion 3 teaspoons butter 1 teaspoon bread crumbs 1 cup sweet cream salt & pepper Slice mushrooms. Saute onion in butter and add mushrooms. Cook until mushroom liquid disappears and butter remains. Add bread crumbs, stir, then add cream & simmer until throughly heated. If I were to make soup out of this I would take a 1/4 cup of the cooked mushrooms in a separate bowl. Then I would put the remaining cooked mushrooms and cream into a food processor or blender and blend it until it smooth. In a sauce pan, melt a 1/2 stick of butter and then add a heaping tablespoon or two of flour in the butter. Turn off the heat and stir flour into the butter-making a paste. Add some milk or cream to the paste mixture to make it thinner(or to the constancy you'd like). Then add the cooked creamed mushrooms in above recipe and add the mushrooms that you saved and stir well. Reduce the heat so you don't scorch the cream. Salt & pepper to taste. This belongs in the food forum ;D

Don't want to process the mushrooms, we want to be able to see and taste them.

re-read the recipe again
To make a good tasting soup-one really should use some of the pureed mushrooms as the base to your soup. You could make the creamed mushrooms and add additional mushrooms to your soup, so you will see them and taste them.
Or you can just open a can of vegetable or beef broth add some cooked mushrooms and watch them float around OR open a can of Campbell's cream of Mushroom soup and heat.

Joyce,
You don't have to get upset. I could have just asked my son, who is a Chef in Florida, but wanted a Polish style, like I had in Poland. Get in the Christmas mood, be happy.

rdywenur,
What I asked for was a recipe that your mother or grandmother used, not one out of a book. I can also look up on the internet, but I wanted, and asked for a real one.

Alicja,
Are you from Poland? Ask Grandma for her own recipe, and I know she has one, and share it with us.
