Anybody who was ever in the U.S. Navy and Food Network’s “Good Eats” will confirm that cold cut, submarine sandwiches, on Italian bread originated in Groton, Connecticut, the submarine capital of the world, home of the world’s largest submarine base, and America’s first submarine base. Groton is a port town, part of New London County, with a large immigrant population of Italians, Greeks, Irish, Polish, and Puerto Ricans some whom came directly to the area, and some who spilled over, seeking work, from nearby Providence, Rhodes Island. In the early 1900s General Dynamics/Electric Boat Division opened a shipyard to build submarines for the U.S. Navy, who had purchased a tract of land, for a military base nearby. A diner was opened to supply the workers, metal grinders. That lunch was a cold meat sandwich on long Italian bread and the sandwich was christened “Grinder”, after the workers. The diner was called “The New London Grinder Shop” Shortly thereafter the submarine base opened, submarines began maneuvers in the Thames River, and thousands of U.S. Navy sailors emigrated, from all over America to Groton, Connecticut, to go to Sub School. The sailors renamed the sandwich “Submarine”, since it was shaped like a submarine, but locals still call it a “Grinder”. When the sailors dispersed back to their homes, and to other bases, all over America, they took the idea of the “Submarine” sandwich with them. When you come from a small town (I was born in the Submarine Base hospital), you may not have many claims to fame, but Sub Sandwiches are ours and I’m claiming them. We also have the best pizza in America, according to Gourmet Magazine.
