Hello geofite,
we were talking about making kielbasa in the past but nobody included such wonderful pictures like you before! I presonally did not do my own kielbasa, but probably we have some people who did. Just wait and probably we will get a better answer.
The photos you included are just wonderful. I also liked the beautiful pottery and a dish. It look so yummy!
Please, keep us updated about your effords to do Polish food

Try this recipe: 4 lbs pork butt 1 lb boneless veal stew meat equal parts fat and lean, grind coarsely. 2 tsp coarse ground pepper 1 T marjoram leaves 4-6 cloves garlic, minced or pressed 1/4 tsp ground allspice 1 C cold water 3-4 tsp salt
Combine meat in a bowl and mix in the spices. Using your hands or a heavy spoon, mix well. cover and chill at least 2 hours or overnight. Shape into patties or links.

This one sounds like a fresh sausage, meaning the pork is not cured with sodium nitrite so it can't be smoked at low temperatures in the smoker, but has to be cooked with high heat quickly. The spice mix can be added to the pork after curing though so I will give them a try. For a quick sausage for grilling, this recipe sounds great and easy to do. Yum!

Yes, I will post any other attempts at home made kielbasa with the recipe. We had a really great Polish store that was around for 40 years. They made the best kielbasa and no other store around here made it even close to them. They closed 2 years ago, and I can't find a good kielbasa anywhere, so I decided to try to make my own and see if I can copy the taste of it. So far, it was close, but not quite the same. I need to experiment more. I have an idea of what to do next so will give it a go soon.
